Butternut Squash and Calabasa Pumpkin
Bisque
Ingredients:
- 2 cups Calabasa Pumpkin
- 2 cups Butternut Squash
- 1 Onion
- 1 Carrot
- 1 Leek
- 1 Celery Stalk
- 1 Cinnamon Stick
- 2 Bay Leaves
- 2 Qt. Chicken Stock
- ˝ Cup Corn Oil
- 1 Cup Pepitas (Roasted Pumpkin Seeds)
- Salt & Pepper, to Taste
To Prepare:
- Peel and cut Pumpkin and Squash into chunks
- In a heavy skillet, place diced Onion, Carrot, Leek and Celery and
sauté for 5 minutes.
- Add Chicken Stock, Cinnamon Stick and Bay Leaves and bring mixture
to a boil. Add Pumpkin chunks and bring mixture to a boil.
- Simmer until Pumpkin chunks are soft, approximately 1/2 hour. Remove
mixture from heat, puree and strain.
- Bring liquid to a boil. Continue to cook until it reaches desirable
thickness. Salt and Pepper to taste. Garnish with Pepitas.
