Butternut Squash and Calabasa Pumpkin Bisque

Ingredients:

  • 2 cups Calabasa Pumpkin
  • 2 cups Butternut Squash
  • 1 Onion
  • 1 Carrot
  • 1 Leek
  • 1 Celery Stalk
  • 1 Cinnamon Stick
  • 2 Bay Leaves
  • 2 Qt. Chicken Stock
  • ˝ Cup Corn Oil
  • 1 Cup Pepitas (Roasted Pumpkin Seeds)
  • Salt & Pepper, to Taste

To Prepare:

  1. Peel and cut Pumpkin and Squash into chunks
  2. In a heavy skillet, place diced Onion, Carrot, Leek and Celery and sauté for 5 minutes.
  3. Add Chicken Stock, Cinnamon Stick and Bay Leaves and bring mixture to a boil. Add Pumpkin chunks and bring mixture to a boil.
  4. Simmer until Pumpkin chunks are soft, approximately 1/2 hour. Remove mixture from heat, puree and strain.
  5. Bring liquid to a boil. Continue to cook until it reaches desirable thickness. Salt and Pepper to taste. Garnish with Pepitas.
