Mom's 80th birthday party

I am starting to plan a party for my mom's 80th birthday party and don't know where to start. My mom was born in Cuba and came to the states. She is a huge social butterfly with alot of friends (of diffrent ages). I don't know if it should be at night or day or what. What do you think?
