Think Swiss..decorate the inside like a ski lodge,if your facility has a fire place use this as the focal point,use skis, snowshoes, winter clothing hung on coat racks, sleds, ski boots etc. as props. Colors could be brown and cream tones. Table names can be famous swiss mountains (ie:Matterhorn,Monch,Eiger,Weiss)table centerpieces can be slabs of white and dark chocolate stacked on a glass plate sprinkled with icing sugar to resemble a "Mountain of chocolate" stick the table on the top. Seating cards can read..."Ms.& Mr. Jones please dine on the Matterhorn" Set up an appetizer station with different fondues including a swiss cheese one. Design each station to look like a swiss chalet. Include a Nordic Beverage station, serve mulled wine, beer in decorative steins, etc. Decorate the buffet table with a large (Nordic themed) ice carving and search out Swiss main dish and salad menus. Rent a chocolate fountain for the dessert table and surround it with fruit for dipping along with other decadent chocolate desserts and Cafe Alpine. Hopefully this venue is somewhere where it will be snowing outside to add to the mood. Hope this helps.
