First and foremost, make sure your caterer had liquor liability insurance. I always ask that I (client) be added to the policy as additionally insured. Secondly, by law, the bartenders should not be serving anyone that appears intoxicated. Thirdly, have cab vouchers on hand for those that overdo it. Hope this helps. Mark
