I love the idea you have. As far as what I'd add, I'd just take some spray snow to the greenery and the hurricane lamp to set the mood - just spray the hurrican lamp on the bottom half, leaving the top virtually unmarred to let the light out. Add your snowman AFTER you spray the snow.

If this is an event where there will be silverware/napkins on the table, I'd get inexpensive matching napkin rings (plastic) and spray those with the snow spray too.

Also at the local dollar stores you can find various tree trimmings including snowflake shaped ones, that you could add to your greenery above to spice it up a bit. Just some ideas!
