I don't think you could go wrong with 15% of the fee. That is standard in a restaurant and is over what the fee is anyway. As fo not feeding the helpers and other staff, I Agree, they should not be fed anyway. Does the boss feed employees while they are working at usual jobs. That alone will save alot of money and then you don't have to worry about seating them etc.You have your guests to think of. you hired them to help you; not to be dependent on you for food.Goodness knows you will have enough to do!!
They shouldn't eat while on the job anyway. That ges for photographers too.etc/...
