Maybe one could contact all the guests and ask them to write a note to your parents, perhaps with a rememberance, and then create an album of all the notes. Maybe one of you could put together an album of family photos that are lying around. If it's an open reception, perhaps you can do it in an open-house format with it taking place over a four hour period where people can come and go. That way, perhaps more people will show up if they don't feel obligated to stay for the whole event.
