I have done a few parties for 80 or so people and one thing that has worked for me is to cook a turkey and a ham and put on a buffet table with rolls and condiments as well as lots of side dishes. The inexpensive chafing dishes sold at party stores keep side dishes hot while back ups are in oven warming. The turkey and ham are served on table with carving knives at room temp. As other side dishes lasagnas and pasta dishes keep well on buffet table and can be made well in advance and warmed up as needed. Good luck!
